Papadzules

We are referring to papadzules, the perfect appetizer or starter that everyone likes. Originally from Quintana Roo or Yucatan, it is a dish with pre-Hispanic origins. This one will take you only half an hour to prepare and you will only need a few varied ingredients that we are going to name. These are very easy to find as well as being very economical, so this recipe is perfect for repeating more than once a week.
Papadzules: what ingredients you need
- Pumpkin seeds
- Epazote
- Tomatoes
- Habanero chili
- Cebolla roja
- Boiled eggs
- Corn tortillas
- Salt
- Pepper
- Water
- WaterOil
Yucatecan Papadzules
Many know them as papadzules yucatecos, since they are the original ones. After gathering all your ingredients, you will start making the pumpkin sauce after crushing the pumpkin seeds. When you have it, put it to cook with a little oil the mixture obtained together with the epazote and the different spices (salt and pepper).
To obtain a liquid but creamy sauce, you will have to add water little by little, until you get the ideal texture and then you will have to remove it from the heat so that it does not lose its properties. With this sauce you will later dip the papadzules.
We continue with the next reddish or orange sauce: boil the tomatoes with the onion and the habanero chile until they have a more consistent consistency or, if you prefer, you can also grind them.
Chop the cooked eggs to fill your corn tortillas, do not fill them too much so they do not come out of the inside. When you have them well rolled, bathe them first with the pumpkin sauce and then with the hot sauce. You can reserve some chopped onion and egg to decorate the top of your dish.
