What is pozole?

This dish is a broth made from corn (and other ingredients) of Mexican origin. In the Nahuatl language ”pozolli” which means boiled or foamy.

This is because one of the steps that must be followed to prepare this delicious dish is to follow the nixtamalization process. It consists of adding two spoonfuls of lime to the corn, which produces a reaction to eliminate toxic parts of the corn.

Although the base is corn and it is commonly served with chicken or pork, there are many variations throughout the country and also around the world.

Where does pozole originate from?

It was born in Mexico during the colonial period and it is a tradition to eat this stew in September, due to the corn harvesting season.

Formerly this dish had as an ingredient…human flesh. The ancient Mexica used meat from the people they had captured and sacrificed them in the festivities in pursuit of the god Xipe Totec.

This process was carried out during the feast of Tlacaxipehualiztli, where prisoners were placed on a large stone and then confronted by armed warriors.

What is in the pozole and how is it prepared?

Depending on the state where you are, you will see some recipes or others, made with different ingredients, but always very tasty and nutritious.

To prepare this dish, you would first have to pre-cook the corn with a couple of tablespoons of lime to eliminate the toxic parts, as we have told you previously, and then let it rest overnight.

The next day you will have to remove the first layer and remove the corn heads. Accompany it with pork or chicken, although you can also choose the type of meat you like best.
